Ingredients
- 250 ml Coconut Cream
- 2 Tbls Mirin seasoning
- PASSIONFRUIT SYRUP:
- 1 Cup water
- 1 Cup sugar
- 2 Fresh passionfruit
- FRUIT:
- 1 Dragon fruit (skin removed)
- 1/4 Honeydew melon (rind & seeds removed)
- 2 Slices pineapple (skin removed)
- 1 Large slice of watermelon (rind removed)
- One lime cut into quarters
Method
- PASSIONFRUIT SYRUP:
- Combine the water and sugar in a small pot and bring to the boil.
- Add the passionfruit pulp from both passionfruit and simmer until reduced by half. (approximately 6 minutes)
- Pour into a heat proof jug and place in the freezer to chill.
- COCONUT CREAM MIXTURE:
- Combine the mirin seasoning with the coconut cream and chill.
- FRUIT SALAD:
- Dice all the fruits (except the lime) into even sized pieces and mix together.
- ASSEMBLY:
- Pour 1/4 cup of the coconut cream mixture into the base of each bowl.
- Place 1/4 of the mixed fruits on top of the coconut cream mixture. (if you want to get fancy you can make them into a cube type structure like I have)
- Drizzle over some passion fruit syrup, and squeeze the juice from 1 lime quarter over the top.
- NOTES:
- You can use any fruits you like, try to stick with fruits that are in season for the best flavour.
- You will have some passionfruit syrup left over, this will keep in the fridge in a sealed container for several weeks.
