Ingredients
- Valcom coconut milk
- Organic Chicken
- Green beans
- Bean shoots
- Lebanese eggplants
- Laksa paste
- Fried bean curd
- Boiled eggs
Method
- Season and fry pieces of chicken, add sliced eggplants in organic olive oil, when cooked,, remove from pan. add laksa paste, stir in paste for 20 seconds, add 1.6 ltr of water, simmer for 10 minutes, add Valcom coconut milk, green beans, and sliced fried bean curd and bring to the boil
- Meanwhile, soak vermicelli noodles and prepare udon noodles (or preferred noodles) and arrange in serving bowls with boiled egg sliced in half, chicken, eggplant, bean shoots
- When laksa has come to the boil, ladle the hot soup over the serving bowls. Add fresh mint. You can also add cooked king prawns, lime juice and light soy. Enjoy
