Ingredients
- 300gram fresh wide flat rice noodles
- 1.5 tbsp peanut oil
- 500g chicken breast fillets,trimmed, thinly sliced
- 1 brown onion, cut into wedges
- 2 tbsp thai chilli jam
- 1 tbsp fish sauce
- 1 tbsp light soy sauce
- 4 cup Chinese broccoli, chopped
- 4 cup Chinese broccoli, chopped
- 0.5 cup roasted cashew nuts
Method
- Heat a wok over high heat until hot. Add peanut oil and swirl to coat. Add half the chicken and stir fry for 2 minutes or until lightly golden. Transfer to a bowl and cover to keep warm. Repeat with remaining chicken.
- Add onion and stir fry for 4 minutes or until golden. Add carrot, broccoli and noodles. Return the chicken and any juices to the wok. Add chilli jam, fish sauce, soy sauce and stir fry for 2-3 minutes or until the chicken is coated in sauce and cooked through.
- Add the cashew nuts. Toss to combine and serve.
