Ingredients
- 1kg Chuck beef or similar slow cook beef (diced)
- 2 onions (sliced)
- 1 jar Valcom massaman curry paste
- Valcom kaffir like leaves
- 8 baby potatoes (quartered) (can use sweet potato if preferred)
- 2tbs fish sauce
- 2 x 400ml cans of coconut milk
- 1/2 cup desiccated coconut
- 1/2 cup plain flour
- Jasmin rice to serve
- Juice of 1 lime
Method
- Coat your diced beef in plain flour.
- Place sliced onion, quartered potatoes, beef, jar of massaman curry paste, coconut milk, lime juice, kaffir lime leaves and fish sauce into the slow cooker. Place on low for 8 hours, or high for 4 hours.
- 30 minutes before the curry is done. Add desiccated coconut.
- Serve with rice. Too easy!!
