Ingredients
- 600g diced salmon
- 1 mango
- 2 Lebanese cucumbers
- Brown or white rice, 2 cups
- Coriander, 3 tablespoons chopped
- Dressing: 4 tablespoons Mirin
- Dressing: 2 tablespoons rice vinegar
- Dressing: 2 tablespoons soy sauce
- Dressing: 2 teaspoons sesame oil
- Dressing: 2 teaspoons root ginger (grated)
Method
- Combine all ingredients for dressing. Marinate salmon with 3 tablespoons of combined dressing. Pan fry or grill until just cooked.
- Dice avocado and mango. Slice cucumber thinly and chop coriander. Arrange for colour in one half of large bowl.
- Cook rice and spoon into other side of bowl.
- Pour over remaining dressing.
- Toss to combine and drizzle generously with Kewpie mayonnaise (preferably in front of guests for dramatic effect!)
