Ingredients
- Massaman curry paste
- 400g Chicken
- 400ml coconut milk
- 2 tbsp oil
- 2 tsp tamarind puree
- 1 tsp fish sauce
- 1 tsp sugar
- 1 cubed onion
- 2 cups potato cubed
- Served on rice
Method
- Stir fry 1/2 jar of valcom massaman curry paste with 2 tbsp of oil over low heat until fragrant.
- Add half of 400ml coconut milk and stir fry for 5 minutes.
- Add the chicken and stir fry for a few minutes on high heat. Add the remaining coconut milk, 2 tsp tamarind puree, 1 tsp fish sauce and 1 tsp sugar, bring to boil.
- Add 1 cubed onion and 2 cups of cubed and parboiled potato. Bring to boil and simmer on low heat until the potato softens.
- Served on rice.
