Ingredients
- 500gm beef stir fry strips
- 150gm green beans, sliced
- 1 large brown onion, sliced
- 1 packet of hakubaku organic Udon noodles
- Peanut oil
- 400ml coconut milk
- 1 tbls of fish sauce
- 1/4 to 1/2 cup Valcom authentic Thai yellow curry paste
- 2 tbls brown sugar
Method
- Heat oil in a large pan and cook onion until soft. Remove from pan. Add beef strips and cook until just brown.
- Add paste and cook, stirring until fragrant. Return onions and add beans with coconut milk, fish sauce and brown sugar, simmer uncovered for 15 minutes.
- Cook noodles in a large saucepan until just tender and drain, adding into curry gently stirring in to sauce before serving.
