Ingredients
- Beef diced
- 1 Onion diced
- 2 Potatoes diced
- 1 can Coconut milk
- Valcom curry paste thai massaman, half jar
- 1 tsp Fish sauce
- 1 tsp Sugar
- 2 tsps Tamarind paste
- Rice
- Chopped peanuts
Method
- Stir-fry half of jar of curry paste with 2 tbsp oil over low heat until fragrant.
- Add onion and beef and fry off until cooked through. Add potatoes and half of the coconut milk. Simmer on low for 25 mins until potatoes are cooked through.
- Add remaining coconut milk, the sugar, fish sauce and tamarind paste. Simmer for another 5 mins.
- Serve with rice and add chopped peanuts before serving.
