Ingredients
- 4 cooked salmon fillets
- Lettuce
- 1 Red capsicum
- 1 Green capsicum
- ½ onion
- 1 tin kidney beans
- 1 tin sweet corn
- 1 Tin black bean
- 1 tin cannellini beans
- 1 tsp wasabi
- ¼ cup olive oil
- ¼ cup vinegar
- 1 clove crushed garlic
- ½ tbsp ground cumin
- Salt and pepper
- 1 tbsp chopped coriander
- 1 tbsp sugar
Method
- Wash and drain all beans and corn. Put in bowl
- Chop capsicums into cubes and dice onion. Add to bowl.
- Mix all dressing ingredients and pour over salad. Leave to marinade a few hours.
- Serve salmon and bean salad on lettuce leaves.
