Ingredients
- 4 Zucchini
- Salt
- 1/4 cup Miso
- 2 tbsp mirin
- 1 tbsp sake
- 1 tbsp chilli oil
- Sesame seeds
- Spring onion
Method

- Cut Zucchinis in half lengthways. Score them, and sprinkle salt. Allow to sit for 30 minutes so the moisture is removed. Then pat dry with paper towel.
- Wisk together the miso, mirin, sake and chilli oil. This will make the miso glaze.
- Fry the zucchinis with oil scored side down until browned.
- Brush the zucchinis with the miso glaze. Place in the oven at 200 degrees Celsius for about 10 minutes. The zucchinis should be golden and tender.
