Ingredients
- Obento Nori Seaweed (1 sheet)
- Obento Udon (2 packs)
- Chicken Tenders (5 pieces or 1 pack)
- Fresh Shittake Mushrooms
- Vegetables (any, I used sweet potatoes)
- Miso paste
- Eggs 2
Method
- Place chicken tenders into an oven dish and put into oven for 15mins, 200 degrees, turning once in the middle.
- Cook soft boiled eggs - 6 mins in boiling water then immediately into cold water. Set aside.
- Cook udon noodles according to packet instructions then set aside.
- Make broth. Boil vegetables and Shittake mushrooms then add miso paste to taste.
- Combine everything together in a bowl and use Obento nori seaweed to garnish. Enjoy!
