Ingredients
- 3 Table spoons of Lee Kum Kee Premium soy sauce
- 1 Packet Lee Kum Kee Mongolian lamb sauce
- One large fresh barramundi cleaned and scaled
- One Cup of freshly chopped up snow peas
- 2 fresh chilies chopped
- 1 large piece of fresh ginger grated
- 2 cloves of garlic finely chopped
- 1 lime1 lemon
- Fresh coriander
- 1 red onion sliced
- Olive oil
- Bean shoots and a small sized salad for each serve
Method
- Preheat the oven to 180°Place barramundi on oven baking tray
- Mix half packet of Lee Kum Kee Mongolian lamb sauce with red onion, garlic, ginger, and chili and stir in a bowlCoat the barramundi with this mixture
- Stir the remainder of the Lee Kum Kee Mongolian lamb sauce with the snow peas in a bowlPack the snow pea mixture into the barramundi as well as 2-3 slices of lemon
- Sliced limes and place over top of the coated barramundi and drizzle Lee Kum Kee soy sauce over the top with a drizzle of olive oil.
- Place in oven and cook for 25 to 30 minutes until cooked
- Serve with bean shoots, fresh coriander, slices of lemon and lime and enjoy with your side salad.
