
Ingredients
- Shallots, finely sliced,greens and whites separated
- 1 carrot diced
- Handful of green beans or asparagus, finely chopped
- 6 chicken thigh fillets
- Bottle of kewpie sesame soy sauce
- 250g pack firm tofu
- 2-packets of different microwave mixed grain rice (your choice)
- Fresh coriander (garnish/optional)
- Deep fried shallots (garnish/optional)
- Fresh shallots (green ends already chopped as garnish)
- Salt & pepper
- 2 x Chinese dried pork sausage, sliced (optional)
- Any leftover ingredients in fridge really
Method
- Add a bit of oil to pan/wok. Cook white ends of shallots for 2 mins in frying pan on medium heat-high heat, stir.
- Add Chinese dried pork sausage, diced carrots, greens or any veggies you like. 3 mins until tender. Remove and set aside.
- Add little bit of oil. Add chicken fillets cook 1min. add a couple of splashes of the kewpie sesame soy sauce to act as a glaze. Flip chicken over after 3-4 mins and cook other side. Add a few more splashes of sauce. Continue cook until chicken is done. Then remove and set aside.
- Use same method above with bean curd. Turn gently only once. Then remove. Clean pan if necessary.
- Add a little oil. Add microwave rice, stir to just heat it up.
- Add sausage and veggie mixture and mix throw. Add any seasoning.
- Turn onto serving dish. Take chicken fillets and slice them place on rush with some tofu.
- Garnish fresh green shallots, fresh coriander and deep fried onions. Can also drizzle more sesame soy sauce over too.
