Ingredients
- 1/3 pack sweet potato noodles
- 400g thinly sliced beef
- 1 carrot, thinly sliced
- 1/2 brown onion, thinly sliced
- 4 button mushrooms, sliced
- 1 baby capsicum, thinly sliced
- Gluten free soy sauce
- Sesame oil
Method
- Add sweet potato noodles to a pot of boiling water and cook for 8 minutes. Drain and rinse in cold water to cool, set aside.
- Marinade beef in 2 splashes of soy sauce and little sesame oil while cutting vegetables.
- Stir fry the onion and carrot for a couple of minutes, then add the beef, capsicum and mushrooms and keep moving around the pan until the meat is cooked.
- Throw in the sweet potato noodles. Add another couple of splashes of soy sauce and drizzle in a small amount of sesame oil, mix together and serve.
