
Ingredients
- Spice paste:
- 1 TBSP vegetable oil
- 2 garlic cloves, peeled
- 2 shallots, peeled
- 1 small red chili
- 25g peanuts
- 1 tsp ground turmeric
- ¼ tsp black pepper
- 1 tsp salt
- 1 TBSP palm sugar
- For the stir-fry:
- 1 TBSP vegetable oil (plus extra for frying the eggs)
- 1 TBSP sesame oil
- 2 chicken breasts, skin removed, cut into thin strips
- 250g prawns heads, shells and tails removed and de-veined
- 2 small bunches of bok choy, white stems and green leaves separated then both chopped into large pieces
- 275g cooked cold long-grain rice (day old rice is the best)
- 1 TBSP light soy sauce
- 2 1 TBSP kecap manis
- 2 free-range eggs
- For the garnish:
- ½ cucumber, thinly sliced
- ½ tomato, thinly sliced
- 1 red chilli with seeds, sliced
Method
- Place chopped white stalks of bok choy in a small bowl and cover with boiling water to soften.
- Blend all of the spice paste ingredients together in a food processor. Add extra oil if needed to make a smooth paste. Set aside.
- Heat oils in a wok on high heat and add both whites and greens from the bok choy and fry until soft (about 2-3 minutes), stirring continuously. Remove from wok and set aside.
- Add some extra oil if needed to coat the wok and continue to heat over a high heat until very hot and just starting to very lightly smoke, then quickly add the chicken and fry for a minute or so, then add the spice paste and prawns and stir well, cooking for about 4-5 minutes.
- Add the bok choy and fry for about half a minute, while stirring.
- Add the cooked rice and stir until it's all been mixed- add a few tablespoons of water if it becomes too dry and starts to stick to the wok.
- Add light soy sauce and kecap manis.
- Heat some oil in a large frying pan over a medium heat and fry the eggs until crisp at the edges and the yolk is hot.
- Serve with fried eggs on top, and arrange the cucumber and tomato around the sides of the dish.
- Lastly use scissors to slice up the chilli and sprinkle over the eggs to garnish.
