Ingredients
- 400g Pork
- Kecap Manis Sweet Soy Sauce 2tbsp
- 1 Capsicum
- 1 Onion
- 4 cloves of Garlic
- 450g preferred Cooked Rice
- 2 eggs
- Chili Paste to taste*
- Salt & Pepper to taste*
- Vegetable Oil 2tbsp
Method
- Dice Pork into small cubes and add to a bowl, mix with Sweet Soy Sauce and desired amount of salt and pepper, mix well.
- Dice all veg to desired size, and mince garlic cloves.
- Place pan on stove on high heat, add the vegetable oil let it get to temperature.
- Add onion to pan, Stir it around for a few minutes until edges begin to clear then add garlic, stir for another 2 minutes, then add the capsicum, stir until onions are almost caramelized.
- Add pork to the pan and continue to stir.
- Meanwhile get a small pan on medium heat, while it heats crack two eggs into a small bowl, use a fork or whisk to beat them until well mixed. Reminder to stir the stir fry pan during this step intermittently.
- Add the now beaten egg mix to the medium heat pan and stir until desired texture of scrambled eggs.
- Once the pork is cooked add cooked rice and chili paste and one more tablespoon of Sweet soy, stir for another minute taste test and if needed add more chili or soy sauce to desired taste.
- Scoop or pour into bowls and serve.
