Ingredients
- 2 Tbsp neutral oil
- 200g peeled and deveined prawns
- 1/2 jar Valcom Pad Thai Stir-Fry Paste
- 150g Pad Thai Rice Noodles
- 1 tsp fish sauce
- 1 tsp sugar
- 1/2 tsp chilli powder
- 1 beaten egg
- 2 cups beansprouts
- 1/2 cup sliced spring onions
- 1 Tbsp lime juice
- 1/4 cup roasted peanuts
Method
- Prepare Pad Thai rice noodles as per packet instructions. Drain, rinse and set aside.
- Heat 1 Tbsp oil in pan and stir-fry prawns until just cooked. Add 1/2 jar of stir-fry paste and mix well.
- Add rice noodles to pan and stir through. Add 1 tsp fish sauce, 1 tsp sugar and 1/2 tsp chilli powder.
- Push mixture to one side of pan. Add 1 Tbsp oil and one beaten egg. Cook for 1-2 minutes then stir through noodles until well combined.
- Add 2 cups beansprouts, 1/2 cup sliced spring onions, 1 tbsp lime juice and 1/4 cup chopped roasted peanuts. Stir through, then remove from heat. Serve with lime wedges.
