Ingredients
- 750g Honey Soy Chicken Kebabs
- 200g Pad Thai rice noodles
- 1/4 bunch mint leaves
- 2tbs soy sauce
- 1tbs pure honey
- 2tsp obento rice wine vinegar
- 2tbs extra virgin olive oil
- 1/3 unsalted peanuts
Method
- Preheat a barbecue grill over a medium to high heat. Spray pan with olive oil and grill kebabs turning occasionally until cooked and golden brown.
- meanwhile cook noodles in boiling water for eight minutes or until tender. Drain and then Refresh under cold water. Drain well. Transferred to a large bowl.
- Pick mint leaves. Combine soy, honey, vinegar, and oil in a small bowl. Set aside.
- Pour 3 quarters of the dressing over the noodles.Add mint and half of the peanuts. Spoon over plates. Top with kebabs and remaining peanuts. Serve with extra dressing.
