Ingredients
- Lamb,
- Panang curry paste
- Coconut cream
- Peanut butter
- Vegetable oil
- Capsicum
- Beans
- Bean shoots
- Fish sauce
- Palm sugar
Method
- Brown lamb
- Pan fry two tbsp paste, add two tabs peanut butter, 2 tbs fish sauce, 650ml coconut cream and 1/4 cup palm sugar
- Pour over lamb in casserole dish and cover and cook for two hours then add veggies and bean shoots then cook further 15 mins. Serve on bed of rice.
