Ingredients
- 1 mug medium grain rice
- 2 Tbs vinegar
- 2 Tbs sugar
- 4 sushi nori wrappers
- 1/4 Lebanese cucumber
- 1/2 carrot
- 1 small can of tuna
- kewpie mayonnaise, plain or flavoured
Method
- place 1 mug of medium rice and 1 1/2 mugs of water into cooking pot. cook, covered, on low heat until water absorbs.
- mix vinegar and sugar in small bowl, mix until sugar dissolves. pour into cooked rice
- let rice cool 20 min or spread rice onto baking tray to cool down quicker
- mix tuna and kewpie mayonnaise
- slice cucumber and carrot into thin long matchsticks
- place one sushi wrapper at a time on chopping board, shiny side down
- thinly spread 1/4 of the rice, leaving about 4 cm of the upper part of sushi wrapper without rice
- place cucumber, carrot and tuna mixture onto the rice
- brush top part of sushi wrapper with little water and roll up the sushi
- repeat 3 more time, use up all the tuna and rice
- slice into small pieces with sharp knife and voila! lunch is ready
