Ingredients
- Cake base :
- 2 eggs, about 65g with shell
- 30 g milk
- 20 g corn oil
- 35 g cake flour
- A little lemon juice
- 30 g caster sugar
- Mayonnaise :
- 100 g Kewpie mayonnaise
- 10 g milk powder
- 50 g condensed milk
- Pork floss and seaweed :
- Appropriate amount of pork floss
- Appropriate amount of seaweed
- Appropriate amount of toasted sesame seeds
Method
- First separate the egg yolks and whites. The bowl containing the egg whites must be oil-free and water-free.
- Add milk and corn oil to the egg yolk bowl and stir until emulsified.
- Then sift in the cake flour and mix well using a zigzag method.
- Before start beating the egg whites, preheat the oven to 160 degrees Celsius. Also prepare a piping bag and baking paper first.
- Add a little lemon juice to the egg whites.
- Beat the egg whites with a whisk at high speed.
- Beat the egg whites until rough bubbles appear, then start adding 30 grams of caster sugar in three batches.
- Whip the meringue until it forms stiff peaks, that is, there are small peaks that stand upright when you pick up the whisk.
- Spoon one-third of the meringue into the egg yolk batter, and mix evenly using the zigzag and folding method.
- Pour the mixed egg yolk batter into the meringue, and mix evenly by folder method.
- Pour the batter into a piping bag after mixing well and pipe the batter in round dome shape about 6cm wide on a baking tray.
- When ready, put them into the preheated oven and bake at 160 degrees Celsius for 25 to 30 minutes. Depending on the situation, you can turn up the heat to allow the surface to become slightly browned and coloured.
- After taking the baking tray out of the oven, tap it on the kitchen bench immediately to allow the heat to release quickly.
- Mix the "mayonnaise" ingredients evenly and set aside.
- Mix the ingredients of "pork floss seaweed" evenly.
- Take two dome-shaped cakes, spread a thicker layer of "mayonnaise" on the inside of the cakes and sandwich them, and thin layer on the outside.
- Finally, dip the round cakes (made up of 2 dome-shaped cakes) into "pork floss seaweed" evenly, and enjoy!
