Ingredients
- 500 g pork mince
- 2 medium potatoes peeled and diced
- 1 cup diced carrots
- 1 medium onion finely diced
- 4 cloves garlic crushed
- 2 1/2 Tablespoons Lee Kum Kee Soy Sauce
- 3 Tablespoons Oyster Sauce
- 1 chicken stock cube added to 1/2 cup water
- 1 tin crushed Tomatoes
- 2 Tablespoons Vegetable oil
- 1/2 teaspoon roughly ground Black pepper
- 1/4 teaspoon salt
- 1 teaspoon castor sugar
Method
- Place diced potatoes in microwave and steam to semi cook (5 mins)
- Heat vegetable oil in wok and fry onion and garlic on high until translucent, add carrots and then pork and stir fry.
- Add potatoes, tomatoes and all other remaining ingredients -bring to a rapid simmer. Cook for a further 10 mins.Garnish with sliced shallots. Serve with Jasmine Rice.
