Ingredients
- Pork Fillet (500g)
- Vegies (potato, carrot, onions)
- Panko Crumbs
- Egg wash (1 x egg and dash of milk)
- Oil for deep frying
- 1 x packet of golden curry mix
Method
- Flatten Pork Fillets with a tenderiser
- Coat Pork fillets in egg wash than in Panko crumbs
- Deep fry pork in a fryer or pot of oil until golden brown than set aside
- Cut the veggies into 2-3cm cubes and fry in pot. Once slightly cooked pour in 600ml of water and bring to boil than turn to low, cover and let it simmer for 15 mins or until veggies cooked through.
- Place packet of curry mix into pot and stir until all mixed through and no lumps.
- Serve on rice with the fried pork fillet on top.
