Ingredients
- 500g pork fillet, cubed
- 2 potatoes, peeled, cubed and lightly steamed
- 2 carrots, peeled, cubed and lightly steamed
- 1 x 92g packet S&B Golden Curry Mix Mild
- 1 brown onion, halved
- 1 cup Panko Breadcrumbs
- 1 egg, beaten
- 1/2 cup plain flour
- 1/4 cup oil
- Steamed rice, to serve
Method
- Slice one half of the onion into cubes. Finely dice the other half and set aside.
- Dust pork in flour, dredge in egg then coat in panko breadcrumbs.
- Alternate threading pork, potato, carrot, and slice of onion onto bamboo skewers until all pork is used.
- Reserving 1 tsp oil, heat remaining oil in large non-stick frypan, and shallow fry skewers over medium heat, turning until browned on all sides and pork is cooked through.
- Meanwhile, heat 1 tsp oil in saucepan and cook diced onion for 3 minutes, then add curry mix cubes and 1 cup of boiling water. Stir until curry cubes dissolve and sauce thickens.
- Serve pork skewers with steamed rice, spooning the curry sauce over the top.
