
Ingredients
- 500 grams pork ribs, cut into smaller pieces
- 1 tbsp. neutral oil
- 1 pc. red onion, sliced
- 3 tsp. garlic, minced
- 1 tsp. ground ginger
- 2 tbsp. shrimp paste
- 350 mL Valcom premium coconut milk
- ½ tsp. black pepper, freshly ground
- 1 pc. green chili, chopped
- 1 pc. red chili, chopped
- 1 pc. hot chili, chopped
- 150 mL Valcom premium coconut milk
- 1 tsp. fish sauce
- 1 pc. green chili, sliced (for garnish)
- 1 pc. red chili, sliced (for garnish)
Method
- Prepare the pork ribs. Remove the excess fat and the tough membrane at the back of the ribs. Cut into smaller pieces.
- In a large shallow pan, heat 1 tbsp. of neutral oil over medium heat. Add the pork ribs pieces and cook for 10 minutes or until lightly browned. Mix occasionally.
- Add the onion, garlic and ground ginger and sauté for 2 minutes until soft. Add the shrimp paste and cook for 3 minutes.
- Pour the 350 mL Valcom premium coconut milk. Mix. Cover the pan and cook for 30 minutes or until the pork is tender and the liquid reduced to half. The oil will also start to separate.
- Add the black pepper, chopped green and red chili and chopped hot chili. Mix.
- Lower the heat. Pour the 150 mL Valcom premium coconut milk and 1 tsp. fish sauce. Season to taste. Cook for 10 minutes or until the sauce thickened. Add more chili if you prefer it spicier.
- Transfer to a serving plate. Garnish with sliced green and red chilies. Serve while hot. Enjoy!
