
Ingredients
- 1-2 Kgs Pork bones
- 12 Large Prawns
- 6 Spring onions
- Bunch Baby Bok Choi
- Thumb size piece Ginger
- 4 Medium Boiled Eggs
- 1 Sheet Dried Kombu
- 3gms Ramen Noodles
- 60ml Soy Sauce
- 60ml ObentoTeriyaki marinade
- 60 Obento Rice wine vinegar
- 30 ml Obento Mirin
Method
- Stage 1. The broth. Soak the pork bones in cold water to clean the blood off. Drain. Cover the clean bones in cold water and bring to the boil for 6 minutes, taking the scum off. Drain and wash. In fresh water bring to a boil, reduce the heat and simmer gently for 10 hours. After this time there should be nothing left except the bones! Strain the broth and discard the solids. The broth should be white with a creamy consistency.
- Stage 2. The Tare. In the simmering broth add Mushrooms, Spring onions, Ginger, Teriyaki, Mirin, Soy and rice wine and simmer for 20 minutes. Add the Kombu and remove after 10 minutes
- Meantime boil the eggs and leave to cool
- Cook the Ramen noodles as per packet instructions and drain.
- The Soup is now ready. Cook the prawns in the broth for two minutes and remove. Cook the Bok Choi in the broth for 1 Minute and remove.
- Place Noodles in a bowl, followed by the broth, Bok Choi and the Prawns.Serve with Shichimi Togarashi (Japanese Chili powder) on the side. Optional but recommended.Slurp your way to culinary Heaven!
- For a quicker dish. Buy store bought broth and continue from Stage 2.Yummy but nothing like a homemade!!!
