Ingredients
- 12 Wonton Wrappers
- 150 grams Minced Raw Prawn meat
- 6 cloves Garlic finely chopped
- 4 TBLS chopped coriander
- 1 tsp fish sauce
- 1 egg beaten
- 1 TBLS oil
- 4 TBLS chopped spring onion
- 1 litre chicken stock .
- 150 grams or cup of bean shoots
- 2 TS palm sugar
- 4 TBLS Oyster Sauce
- cracked black pepper
Method
- For Wontons. place wonton wrappers on flat chopping board.
- Mix together 2 ts of the chopped garlic, coriander, minced prawn, fish sauce, 2 TBLS of the chopped onion and beaten egg. Season with cracked black pepper
- Put a spoon of prawn mixture in centre of each wonton,and fold over to make a parcel. set aside.
- FOR SOUP . Heat oil in large pan/wok . Add remaining garlic and cook until garlic is golden .
- Pour in chicken stock.( Can use stock cubes) add Oyster sauce, bean sprouts,palm sugar.
- Bring Soup to boil and add wontons. Remove from heat when you can see prawn is cooked. approx 4 minutes.
- to serve ... Divide soup into 4 bowls and sprinkle remaining spring onion to garnish
