Ingredients
- 3c vegetable stock
- 1 tbspn salt reduced soy sauce
- 1 tbspn mirin
- 2 garlic clove smashed
- 1 cm ginger sliced
- 1/2 tspn toasted sesame oil
- 150g ramen noodles
- 1 bunch bok choy chopped, stem and leaves seperated
- 1 small carrot sliced
Method
- Place stock, garlic, ginger soy sauce, mirin and sesame oil in a pot and let it simmer for 10 minutes for the flavours to infuse
- Add carrots and bok choy stems to the pot and cook until soft
- Add ramen noodles to the pot and boil for 4 minutes.
- Add bok choy leaves and simmer for a minute
- Serve in a bowl with chilli (optional)
