Ingredients
- Pork fillet
- 1 tablespoon peanut oil
- 1 brown onion chopped
- 2 Tbspns Valcom Red Curry Paste
- 270 can co milk
- 1/4 small fresh pineapple
- Lime juice, fish sauce, brown sugar
- Coriander
Method
- Heat one tablespoon of peanut oil in a wok, add chopped brown onion, stir fry for 3 minutes.
- Add sliced pork fillet pieces, cook for 3-5 minutes then add red curry paste cook a further minute.
- Add co milk, reduce to simmer for 10 minutes.
- Add fish sauce, sugar, pineapple & simmer for two minutes then add lime juice to taste.
- Serve into bowls with rice topped with coriander and shallots if you have.
