Ingredients
- 400 grams of salmon
- 1 Red Onion
- 1 piece of fresh ginger
- 1/4 cup Valcom red curry paste
- 1 tin valcom coconut milk
- 1 tub Cherry tomatoes
- 1 bunch of green veg
- Juice from a lime
- 2 tsp brown sugar
- 2 tsp fish sauce
- 1 kaf lime leaf
Method
- Cut salmon into bite size pieces and stir fry until golden. Remove and place on grease proof paper.Add sliced onion and ginger and fry till fragrant and golden.Lower heat and add curry paste and fry off 2 - 3 minutes.Add coconut milk and bring to a simmer.
- Add the kafir lime leaf, cherry tomatoes and greens and cook for 3 - 5 minutes depending no the kind of greens you use.Return the salmon to the pan and cook for a further 1 - 2 minutes.
- Remove from heat and stir through the lime juice, brown sugar and fish sauce .
- Serve with rice and a little coriander.
