
Ingredients
- 500gm Chicken mince
- 150gm Rice Noodles
- 4 teasp Sesame oil
- 1 tesp dark soy
- 2 med carrots
- 1/3 cup scallions
- 2 tabsp partly chopped
- 1/4 teasp garlic powder
- 1/4 teasp ground ginger
- 3 tabs soy sce
- 1 tabsp rice wine vinegar
- 1.5 tabsp Maple syrup
- 2 teasp chilli garlic sauce
- 2 teasp cornstarch
- 3/4 cup vegetable stock
Method
- Cook noodles as per packet instructions. Then toss in a little sesame oil.
- Season chicken mince and shape into small balls and fry. Set aside and drizzle with dark soy.
- Slice thinly carrot and any other vegetable like snow peas and zuchinni and fry.
- Wisk up sauce garlic powder, ground ginger, soy sce, rice wine vinegar, Maple syrup, chilli garlic sauce, cornstarch, vegetable stock.
- Return chicken to the pan with vegetables, stir in sauce and scallions and parsly. Add the noodles, toss then serve.
