Ingredients
- 6 sheets of Rice paper
- 100g rice noodles
- 1 avocado
- 1 cucumber
- 1 carrot
- Cos lettuce
- Roast chicken
- Kewpie mayo
- Peanut sauce and soy sauce if desired
Method
- Cook rice noodles for approximately 2 minutes and then rinse in cold water
- Slice cucumber, carrot, avocado and chicken into strips
- Prepare a wide bowl of cold water
- Place a damp tea towel over a plate
- Submerge rice paper into water just for a couple seconds
- Place rice paper onto damp tea towel and add cucumber, carrot, avocado, chicken and kewpie mayo as desired
- Fold over sides and roll it
- Serve with peanut sauce and soy sause
