Ingredients
- 2 baby carrots 🥕 finely sliced
- 2 baby cucumbers 🥒finely sliced
- 3 baby capsicum 🫑 finely sliced
- 8 snowpeas 🫛 finely sliced
- 2 medium chicken breasts
- 1pkt Obap sweet potato noodles
- 1pkt rice paper wrappers
- 1 jar Hoisin sauce
Method
- Boil small pot of water.
- While waiting for water to boil; Slice chicken breasts in half to make thinner. Add to pan cook 5 min each side.
- Add noodles to boiling water for 8 min.
- Slice vegetables.
- Boil kettle. Use boiled water to fill shallow lipped platter.
- Remove noodles and rinse with cold water.
- Remove chicken and finely chop/slice.
- Arrange food and hoisin sauce on bench (pictured) One at a time place wrapper in boiled water and immediately remove and place on damp teatowel. Assemble chosen fillings in centre of wrapper. Fold in top and bottom. Roll up from side. Enjoy.
