Ingredients
- 1 large onion - diced
- 2 finely diced garlic cloves
- 2 tablespoons olive oil
- 4 cups veggie stock
- 4 cups water
- 1/2 cup shiitake mushrooms roughly chopped
- Obento Yaki Nori for sushi TO TASTE
- 1/8 cup mirin
- 2 tablespoons white miso paste
- Pepper to taste
- For spicy add sriracha or chilli oil
- Soy sauce - to taste
- 200 ish grams of ramen noodles
- 250 grams cubed and crisped tofu
- Veges of whatever you like- steamed/sauteed veges, bok choy, shredded Carrot, cabbage, mushrooms (I like enoki)- roasted veges, Cauliflower, winter squash, roasted Carrots, anything you like you can put in
- GarnishesCrushed obento sushi sheetsSesame seedsSliced shallots
Method
- If adding roasted veggiesdo this first. Toss bite-sizedpieces, with a little olive oil,salt and pepper and place ona baking paper lined panand roast in a 200C ovenuntil fork tender
- Make the BROTH: Overmedium-high heat, saute theonion in 1 tablespoon oiluntil tender about 3minutes. Turn heat tomedium, add thegarlic cloves and continuecooking the onions until theyare deeply golden brown.Add the veggie stock, waterdried shiitakes, a crushed sheet of obento sushi and mirin.Bring to a Simmer
- Simmer for 25-30 minutesuncovered on med hea. Add themiso, and pepper to tasteAdjust salt to your liking(feel free to add salt, soy ormore miso). Keep warmFYI: If this reduces too muchit may become salty...simply add a little water totaste.
- While the broth issimmering, cook theramen noodles in a pot ofboiling water, according todirections. Drain. Toss withsesame oil to keep separated.
- Prep other veggies andother toppings. Feel free tosteam bok choy or freshspinach, or saute them untiljust tender. If usingmushrooms, saute in a littleoil until soft, seasoning with saltand pepper. Use a combo offresh and cooked veggies forthe best texture. Makethe crispy tofu!
- Assemble Ramen Bowls:Fill bowls with cookednoodles, crispy tofu and anyother veggies you want. Pourthe flavorful Shiitake brothover top. Garnish with alittle drizzle of sesame oiland sriracha. Top withShallots and sesame seeds.
