Ingredients
- 450g salmon fillet
- 2 Cups Rice (of your choice)
- Keypie mayonaise
- 1 Cucumber
- 3 large Tomato’s
- 200g frozen Edamame Beans
- 600g frozen potato gems
- Soy sauce
- 2 avocados
- Drizzle of lemon infused olive oil
- 4 lemon wedges
Method
- Begin by cooking 2 cups of rice. Once cooking, follow packet instructions to cook potato gems via preferred method.
- Heat a drizzle of lemon infused olive oil in a pan and cook salmon for 3 minutes on each side over medium heat.
- Whilst salmon is cooking, dice tomato, cucumber and avocado. Defrost edamame.
- When ready, place all ingredients into serving bowls and drizzle soy sauce over rice and salmon and Kewpie over everything. The more Kewpie mayonnaise the better. Serve with lemon wedge and enjoy!
