
Ingredients
- 2 x salmon fillets
- 2 x bunches (180g) soba noddles
- 2 tbs tamari
- 2 tbs maple syrup
- 2 spring onions, finely chopped
- 1/2 bunch coriande, roughly chopped
- 1 cup edamame beans
- 1 tbs black sesame seeds
- 1 avocado, sliced
- 1/3 cup wasabi peas, crushed
- 2 tbs mayonnaise
- 1 tbs tamari
- 1 tbs chilli sauce
- 1 tbs water
Method
- Preheat oven to 180 degrees
- Place salmon pieces in a bowl, combine tamari, maple and water. Stir to coat and bake in oven for 20 mins.
- Cook soba noodles per packet. Rub through cold water and place some sesame oil through if they get too sticky.
- In a large bowl, add soba noodles, onion, avocado, coriander, sesame seeds and gently combine. Serve into two smaller bowls. Break salmon into smaller pieces and spread over top.
- Combine the final 4 ingredients for the dressing and drizzle over salmon soba noodles.
