Ingredients
- Soba Noodles Salmon FilletsSoya SauceSesame oilHoneyLemonCucumber AvocadoCherry TomatoesEggs
- 1 tbsp olive oilJuice of one lemon Half the amount of one lemon juice - Soya SauceHalf the amount of one lemon juice - Honey1 tsp of sesame oil
- 2 portions of Salmon fillets either skin on or skin off Half a punnet of cherry tomatoesHalf a continental cucumber One AvocadoOne packet of Soba Noodles
Method
- Boil one small pot of water over stove top Once water is boiled, add two bundles of Soba noodles to water Cook soba noodles for 4 minutes Strain noodles in colander and rinse the soba noodles under cold running water to remove excess starch. Remove from running water and allow to drain to the side
- To make the dressing or sauce Juice one whole lemonMeasure the amount of juice from lemon into a small mixing bowl If the lemon has 2 Tbsp of juice Then the amount of Soya sauce added will be 1 Tbsp (amount is half of what the lemon juice is produced)Add soya sauce to Lemon Juice Do the same method for honey as per Soya (amount is half of what the lemon juice is produced)Add honey to Lemon Juice and Soya sauce in smallMixing bowl and continue toMix and combine until total dilution Set dressing asideAdd 1 tpsn of sesame seed oil to dressing and stir
- In a small non stick pan Add 1 Tbsp of olive oil to pan Wait till pan and oil is hot Season both sides of salmon fillets with salt and pepper and sear the fillets skin side first for 5mins of mid to high heat. Once both salmon fillets are cooked to your preference, remove and place on paper towel on a plate to absorb excess oils. In a pan fry 2 eggs sunny side up to you preference of consistency and set aside as per salmon fillets Cut up all remaining vegetables in bite size pieces to your liking (cherry tomatoes, cucumber) Place all dry condiments in a shallow bowl and deep plate and arrange condiments as your liking with the Soba noodles as the base bed of plate. Pour the dressing over all the condiments for your own tasting BAM!! FAB n FAST
