Ingredients
- 1/2 cup Jasmine rice
- Organic coconut oil spray
- 1 x Atlantic Salmon fillet
- Kewpie mayonnaise
- Tsp light soy sauce
- Sriracha sauce
- Seaweed nori
- 1 1/2 cups water (for rice)
Method
- Rinse rice, add water to sauce pan, add rinsed rice. Bring to boils then simmer on low for 5 mins, turn off heat and place lid on sauce pan. Allow rice to absorb any remaining water, fluff with fork when ready to serve.
- Start the salmon cooking,. Using a nonstick pan, spray pan to coat with coconut spray and once pan is hot add Salmon skin side down. Cook until half way done then flip and cook salmon for about 3 mins or until desired color.
- In a clean bowl, add soy sauce and salmon. Break salmon apart with fork.
- Add cooked rice to bowl, fold in salmon. Layer salmon rice with Kewpie mayonnaise and sriracha sauce. Place seaweed nori on the side.
