Ingredients
- Rice paper
- Nori sheets
- 200g diced fresh salmon
- 2tbsp mayonnaise
- 1tbsp chopped chives
- Salt
- Pepper
- Lime juice to taste
- 1 cup neutral oil for frying
- Sesame seeds to garnish
- Diced dill sprig
Method
- Dampen rice paper with water and place on top of the nori sheet. Allow to dry on a cooling rack
- Heat oil to 190c
- Cut the rice paper/nori sheet into square quarters
- Place the cut rice paper/nori sheets into the oil one at a time and fry until fully puffed before removing from the oil and allowing to cool. Sprinkle with salt while warm
- Toss diced salmon with mayonnaise, dill, salt, pepper and lime juice. Season to taste
- Spoon a portion of salmon mix onto the nori side of your crisps and garnish with chives and sesame seeds
