Ingredients
- Meatball Ingredients: 500g beef mince
- 3 tbsp salted black beans (fermented black soybeans), rinsed and finely minced/mashed
- 3 garlic cloves, minced
- 1 small shallot, grated
- 1 tbsp grated ginger
- 1 egg
- 2 tbsp breadcrumbs
- 1 tbsp soy sauce
- 1 tbsp hoisin sauce
- 1 tsp five-spice powder
- 1 tsp chilli garlic sauce
- 1 tbsp chopped fresh coriander
- Sauce Ingredients: 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp honey
- 1 tsp rice vinegar
- 1 tsp cornstarch mixed with 2 tbsp water
- 1/2 cup chicken or vegetable stock
- 1 tsp sesame oil
- Salad ingredients : 1 cup ripe papaya, diced
- 125g Rocket
- 1 Green jalapeƱo
- 1 small red radish, thinly sliced
- Salad Dressing: 1 tbsp lime juice
- 1 tbsp rice vinegar
- 1 tsp honey
- 1 tsp mirin
- 1 tbsp olive oil
- 1/2 tsp grated ginger
- A pinch of salt - check taste first
- 2 bundles of soba noodles (3 bundles per pack)
- Soba glaze: 1 tbsp sesame oil
- 1 tbsp soy sauce
- 1 tsp honey
- 1 tsp rice vinegar
- 1/2 tsp grated ginger
- 1/2 tsp chilli oil (optional, for heat)
- 1 tbsp roasted black sesame seeds
- Garnish: 2 tbsp finely chopped spring onion & Roasted black sesame seeds
Method
- Salad Instructions: Combine papaya, rocket and radish in a bowl.
- Whisk the dressing ingredients until emulsified, then drizzle over the salad. Toss gently to coat. and garnish with sesame seeds. Set aside
- Meatball Instructions: Mix all the ingredients in a bowl until well combined. Preheat oven to 180C
- Shape into small meatballs (slightly smaller than golf ball size), and place on 2 trays lined with baking paper. Approx. 24 meatballs.
- Place in preheated oven and cook for approx. 10 -15 mins (turn after 7 minutes) to ensure even cooking. Remove once done. Make noodles and sauces while meatballs are in oven.
- Noodle Instructions: Boil soba noodles according to package instructions. Drain and rinse under cold water to remove excess starch. Set aside.
- Make the Soba glaze: In a small bowl, whisk together sesame oil, soy sauce, honey, rice vinegar, grated ginger, and chilli oil (optional) Set aside.
- Make the meatball sauce: Heat sesame oil in a small pan over medium heat. Add soy sauce, oyster sauce, honey, and vinegar. Stir well.
- Add the cornstarch slurry and stock. Simmer until thickened and glossy.
- Toss the noodles: In a large pan or wok, heat the glaze over medium heat. Add the cooked soba noodles and toss until evenly coated and warmed through.
- Arrange the glazed soba noodles in on the plate, add meatballs on top of or next to the soba noodles.
- Generously spoon the meatball sauce over the meatballs and let it mix onto the noodles for added flavour. Place the salad alongside the noodles and meatballs for a refreshing bite. Garnish with spring onions and extra black sesame.
