Ingredients
- 400gm beef or pork mince
- 3 garlic cloves
- 4 shallots
- 1 carrot
- 1 capsicum
- 1/2 zucchini
- 1 packet LEE KUM KEE san choy bao sauce
- 1 Cos lettuce
- 2 bunches vermicelli noodles
- 1/2 bunch fresh coriander
- 1 tablespoon olive oil
Method
- Heat oil in a pan. Add crushed garlic and chopped shallots. Cook for one minute. Add chopped carrot, chopped capsicum and chopped zucchini. Cook for another minute. Add mince to the pan, and break down with wooden spoon. Cook through and continue stirring, making sure the meat doesn’t clump together.
- Add LEE KUM KEE sauce. Mix through carefully. Allow to simmer slightly for 10 minutes.
- Meanwhile, soak vermicelli noodles in water according to packet. Once soft, drain and set aside.
- Thoroughly wash lettuce leaves and pat dry with some kitchen towel. Chop coriander roughly and set aside.
- To assemble your meal, take a crunchy lettuce leaf and put a small amount of vermicelli noodles into the leaf, next add a spoonful of mince, and top with some coriander! So delicious, there won’t be any leftovers!
