Ingredients
- 500g cubed beef
- 400ml coconut milk
- 6 tablespoons of ground peanuts or 4 tablespoons of peanut butter
- 1 1/2 tb spoons Massaman curry
- 1 1/2 tb spoons fish sauce
- 1 tb spoon brown sugar
- 2 tb spoons of water
Method
- In a saucepan stir in coconut milk over high heat until boiling
- Reduce heat add curry paste stir until blended. Let simmer for 5 minutes. While simmering skewer your meat
- Add peanuts and stir. Add sugar and fish sauce, once sugar has dissolved add water and continuously stir over high heat for 8 minutes. Sauce will reduce and thicken.
- Brush your skewered meat with sauce and cook under hot grill 6 -7 mins turning half way through and brush with more sauce. Serve with rice.
