Satay Chicken with fresh lime, cucumber and tomato

Ingredients

• Coconut creamMirin Ponzu Satay sauce
• Vegetable oil
• 500 chicken
• Steamed riceLimesCucumberTomatoes

Method

1. Slice chicken and cook both sides in oilTake out and add satay sauce to heat through and activate ingredients Add tin of coconut cream and other ingredientsBring to boil
2. Reduce to simmer then add chicken back into sauceHeat through
3. Squeeze fresh limeCook riceServe chicken over rice with wedge of lime, cucumber and tomato
