Ingredients
- 500g lamb fillet
- 2 tablespoon ABC sweet soy sauce
- 1 teaspoon salt
- 1/2 teaspoon white pepper
- Lime juice
- Fried shallot, to serve - optional
- Wooden skewers
- Ingredients for the dipping sauce;
- 5 birds eye chillies or any chillies you like, sliced thinly
- 3 shallots, sliced
- 1 medium sized tomato, cut into 1x1cm cube
- 1 small cucumber, cut into 1x1 cm cube
- ABC Sweet Soy Sauce
- Water to dilute the dipping sauce, if required
Method
- Wash the lamb fillet and diced into say 2x2cm cubes.
- Marinade the lamb with ABC sweet soy sauce, salt, pepper and squeeze of lime juice. Set aside for at least 30 minutes for the lamb to absorb the marinade.
- Thread the lamb onto wooden skewers
- Preheat a chargrill or large non-stick frying pan over high heat. Add a bit of oil to avoid the satay stick onto the pan. Cook lamb skewers for 2 to 3 minutes on each side or until cooked to your liking. Serve with the dipping sauce.
- Dipping Sauce: mix all of the ingredients together. Taste until you like the combination of flavours. Add a bit of water if the dipping sauce is too thick.
