Ingredients
- 28g dried Wakame seaweed
- 1 shallot, finely chopped
- 1 1/2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp mirin
- 1 tbsp sesame oil
- 1 pinch cayenne pepper
- 1 tsp ginger root, grated
- 1/2 tbsp sesame seeds (optional)
Method
- Rinse the seaweed then put it in a bowl and soak it in at least 5 times its volume of water. Let rest for about 10 minutes until hydrated and tender.
- Meanwhile, combine the remaining ingredients in a salad bowl, except sesame seeds.
- Drain and gently squeeze the seaweed to remove excess water. Chop or cut up then add to the salad bowl.
- Toss and taste and add more seasoning if necessary. Garnish with the optional sesame seeds and shallots.
