Ingredients
- 2 tbsp tahini
- 1.5 tbsp Kewpie mayo
- 2 tbsp soy sauce
- 1 tsp rice wine vinegar
- 1 tsp maple syrup or sugar
- 1 tsp chilli oil (optional)
- 1 tbsp sesame oil
- Half cup veggies ie bok choy, carrot, edamame
- 1 single serve pkt soba or udon noodles
- Sesame seeds and chopped spring onion to serve
Method
- Put some water to boil in med saucepan. This is to blanche the bok choy and cook the noodles so make sure enough water for both
- Mix all the rest of the ingredients except garnish in your serving bowl until well mixed.
- Add bok choy or edamame to boiling water along with noodles. Boil for no more than a minute.
- Drain noodles and add to sauce bowl along with bok choy. Allow a little of the noodle water into the bowl if sauce needs to be loosened.
- Stir well until covered with sauce, then add chopped spring onions and sesame seeds to garnish
- Enjoy your super quick, super tasty, vegetarian sesame noodles!
