
Ingredients
- 1 pkt Soba noodle
- 150ml Kewpie Sesame dressing
- 1/2 small wombok, shredded
- 1/2 bunch Coriander, washed and chooped
- 2 stem spring onion, sliced
- 50g pickled ginger, chopped
- 100g mixed salad leaves
Method
- Bring a pot of water to the boil, then cook soba noodles according to directions. Drain and rinse until cold.
- In a large mixing bowl, add noodles, wombok, herbs and dressing, toss gently to combine.
- Fold in the pickled ginger and lettuce gently.
- Arrange in a large serving bowl to guests to share.
- Can be used as a base for a meal by adding grilled salmon or chicken, and some extra edamame for an extra protein hit.Will last 2-3 days in the fridge.
