Ingredients
- 2 pieces of Atlantic salmon
 - 2 tablespoons soy
 - 1 tablespoon maple syrup
 - Half a pack of soba noodles
 - Half a cup of coriander
 - 2 tablespoons white sesame seeds
 - 1 cup edamame
 - 1/2 avocado
 - 2 tablespoons kewpie syracha mayonnaise
 - 1 tablespoon soy sauce
 - 2 teaspoons chilli oil
 - 2 teaspoons rice wine vinegar
 
Method
- Marinate salmon in maple syrup and soy sauce for one hour then put in the oven for 20 minutes
 - Cook soba noodles following packet instructions
 - Toast sesame seeds in a pan until brown
 - Mix soy sauce, kewpie, rice wine vinegar and chilli oil to form a dressing
 - Slice avocado and defrost edamame in boiling water
 - Arrange cooked salmon fillets on top of cooked soba and top with coriander leaves, avocado, sesame seeds and dressing
