Ingredients
- 750g Pork mince
- 2 1/2 cups shredded wombok cabbage (any cabbage will do)
- 2 tbsp sesame oil
- 1/2 long red chilli finely diced
- 3 tsp freshly crushed ginger
- 4 cloves garlic (grated)
- 1 shallot finely chopped
- 2 tbsp soy sauce
- 2 tbsp oyster sauce
- 1/2 tsp white pepper
- 1 tbsp cornflour
- 1 tsp fish sauce
- 1 egg
- Generous handful of chopped coriander
- Chopped chives (approx 2 tbsp)
- Dumpling wrappers - Gow Gee pastry
Method
- Although these are super fast and simple to cook, it's the preparation time that puts people off making delicious dumplings at home. Don't be... once you get good at it you will never go out for them EVER again!!
- Use a Mandolin to shred cabbage and then chop down with a knife. Combine pork and all ingredients in a bowl and mix.
- Place a teaspoon of mixture in centre of each wrapper and fold, I have a tiny bowl with cornflour and water to use as a 'glue' to seal the edges. Pinch the wrapper like you are creating pleats, 3-4 depending on the look you want to create.
- Call in the kids to help out... it's great to get the whole family involved and fun social experience too! Now it's time to steam these little treasures... place in either a bamboo basket or any steamer tray making sure they don't touch or they can stick together. Steam for 15 minutes.
- Serve with your favourite dipping sauce or chilli oil. Garnish with finely diced chilli and coriander. Your family and friends will be begging you to make these every week!
- Fun fact * In Chinese Ancient times - Jiaozi resembled 'wealth' - people believed eating these little delights would bring good fortune and riches in the coming year.
