Ingredients
- Chicken
- Onion
- Oil
- Carrots
- Capsicum
- Zucchini
- Garlic
- Chilli
- Thai green curry paste
- Coconut milk
- Thai basil
- Rice
- Olive oil
- Baby corn
Method
- Cut/dice up all veg. Put oil and onion in a pot, cook till translucent. Add carrot, cook for 3 mins. Add chicken, cook 3 mins. Add curry paste, garlic, chilli. Cook for 3 mins. Add rest of veg, stir. Stir in coconut milk and a bit of water. Cook for 10ish mins. Add pepper if you want.
- Make rice, or cauliflower rice to add with it at the end.
- Spoon into Tupperware. Garnish with basil. Done. Take to work. Microwave on meal break.
