Ingredients
- Valcom 210g green curry paste
- 1 tbsp olive oil
- 4 tbsp corn flour
- 2 tsp fish sauce
- 2 tsp sugar
- 4 tbsp lime juice
- 1 red chilli chopped finely
- 800ml coconut milk
- 1kg chicken breast diced
- 400g eggplant diced
- 1 red capsicum diced
- Basil, salt and pepper to taste
Method
- Combine liquids, sugar, basil and salt and pepper. Mix in flour and curry paste.
- Add diced vegetables and chilli
- Combine chicken and vegetable mixture in slow cooker. Cook for 6-7 hours.
- Serve with white rice.
